Devilled Eggs

On a rainy sunday evening I decided to treat myself with a snack that is very dear to me… it is one of the few things that remind me of Calcutta street food. Devilled eggs… the bong “Deem-er Devil” (Egg Devil) is quite different from the usual one. I came up with the recipe by mostly observing and tasting…try it out and let me know how you like it…

You will need:

Boiled eggs

Boiled potatoes

Chopped onions, ginger, garlic, green chillies.

bread crumbs

two more eggs

lots of oil to fry it in

Preparing the Masala:

Fry the chopped onions, ginger, garlic and green chillies with chicken masala or garam masala, Salt (add a little more since we will be adding this to the boiled potatoes) and as much red chilli powder as you think you need ( since we have added green chillies already, you might not need the red chilli powder)

To Mash the potatoes, I have a little tip. It might be a little more time taking than just pounding the potatoes, but it helps avoid those nasty lumps. After you peel the boiled potatoes, grate them… When you mix it after grating, all you would get is smooth mashed potatoes without those stupid lumps in them.

Now mix the fried onions with the mashed potatoes. Check the taste, the salt should be perfect.

Preparing the poor eggs to be devilled :

Cut the Boiled eggs into four pieces, vertically. You might want to differ here once you read the whole recipe… but for now keep following 😛

Also, beat the two eggs and keep aside.

Now that we have the masala (the coating), the sliced eggs, the bread crumbs and the raw eggs… follow this process.

Make sure your oil is boiling hot.

First take enough potato mixture and press your forefinger to make a slight impression.

Then place a quarter of the egg like this

Cover up the entire thing.

Dip it into the egg mixture

Roll it in the bread crumbs and make sure it is coated properly

Fry it in the hot oil till golden brown.

Enjoy with hot and sweet sauce.
